One of the standout features of Vietnam Bistro is its extensive menu, which caters to a wide variety of tastes. Some of the must-try dishes include:

Pho - Vietnam’s Famous Noodle Soup

Pho is the heart and soul of Vietnamese cuisine, and at Vietnam Bistro, it’s made to perfection. The rich, aromatic broth is simmered for hours, creating a deep, flavorful base that’s complemented by fresh herbs, tender meat, and rice noodles. Whether you opt for the classic pho bo (beef) or pho ga (chicken), each bowl is a masterpiece of flavor that will warm you from the inside out.

Banh Mi - A Vietnamese Sandwich with a Twist

Another fan favorite is the Banh Mi. This delicious sandwich is a perfect fusion of French and Vietnamese influences, combining a crispy baguette with a variety of fillings such as grilled pork, chicken, or tofu, along with fresh vegetables and herbs. At Vietnam Bistro, each Banh Mi is expertly crafted, offering a satisfying balance of crunch, spice, and savory goodness.

Goi Cuon - Fresh Vietnamese Spring Rolls

Looking for a lighter option? Don’t miss the Goi Cuon, or Vietnamese spring rolls. Came here the first time to try their Bun Bo Hue (Spicy Beef Noodle) because this is the only Vietnamese restaurant in Chico that serves it.. it wasn't too bad, they also give blood chunks with the dish which is good - if you're adventurous, definitely try it! The noodles that were served were thin vermicelli noodles, which is a different take on this dish because BBH is usually served with thicker vermicelli noodles. But overall, not too bad - I know I can come here if I'm ever craving BBH noodles.. Came back a second and third time for their beef pho. The first time, the broth was a little sweeter.. the second time, the broth was a little saltier, but that's okay.. i like both styles of broth. They do give a good amount of beef slices and beef ball in the bowl and it's pretty well portioned. However, I do wish they had other options for pho, like combination pho with: tripe, flank steak, beef ball, rare steak, brisket etc.. something more than the 3-4 that they have on the menu.. The service is pretty slow .. we went during a lunch rush once - that took a really long time.. then went on a Sunday morning when they opened and that took even longer... there was only one other person that was in the restaurant when we arrived & the food did take a really long time to get to us...Our server was yawning the whole time and he just looked sooo tired.. But - overall, after trying EVERY Vietnamese restaurant in Chico, I can honestly say this is one of the top 2 places to get good pho. I would highly recommend AND I like that their prices are still reasonable!!! Their bowl of pho is still under $15. Please keep it like this.!! Giving 4 out of 5 - because I like that their price is still relatively reasonable for their food.
